Nutrient family ยท Food, forms and function
Vitamin A
One nutrient story, several starting points.
Vitamin A supports vision and the maintenance of skin and other tissues. It is fat-soluble and stored in the liver. [2]
A carrot salad and an egg-topped sweet potato hash introduce different starting materials. Following those forms is a better way to understand the foodโskin connection than treating a nutrient, a precursor and a skincare ingredient as interchangeable.
Meet the family
Two ways food contributes.
Animal foods supply preformed vitamin A; plants supply precursors such as beta-carotene that the body can convert. These are different dietary starting points. [2]
Preformed sources
Eggs, dairy foods, fish and liver contribute preformed vitamin A. Some foods are fortified, so their labels tell another part of the story. [2]
Plant precursors
Carrots, orange-fleshed sweet potatoes, mangoes and dark leafy greens supply provitamin A carotenoids. Orange is a familiar clue, but spinach belongs in this family portrait too. [2]
Everyday biology
Small amounts, important work.
Eating carotenoid-containing vegetables with some fat can improve absorption. The vegetable and its dressing therefore form a useful nutritional partnership. [2]
The connection is biological, not a promise that a particular dish will change skin appearance. The useful question is how the foodโs form relates to the bodyโs handling of it.
Follow the forms
Retinol, retinal and retinoic acid.
A closer look at the metabolic pathway
The similar names describe related but distinct molecules. In the body's metabolism, retinol can become retinal, also called retinaldehyde. Retinal can return to retinol or be converted to retinoic acid; the latter step is physiologically irreversible. Retinyl esters connect to the storage side of the pathway. Enzymes and binding proteins regulate this handling. [3]
A map of the bodyโs handling.
Why keep the names separate?
Retinol, retinal and retinoic acid occupy different positions in metabolism. In a cosmetic formula, how much reaches a particular skin layer and becomes another form requires separate measurement.
Why is the pathway simplified?
Storage, transport, conversion and breakdown happen together. The familiar retinol-to-retinal-to-retinoic-acid sequence highlights one route through that larger system; molecules can also enter storage or breakdown pathways. [3]
Reading nutrient numbers
RAE puts different forms on one scale.
Food activity equivalents:1 ยตg RAE corresponds to 1 ยตg retinol, 12 ยตg beta-carotene or 24 ยตg alpha-carotene/beta-cryptoxanthin. Supplement beta-carotene uses another factor. [1]
Keep the food name, preparation and portion beside the number. Comparing a cooked serving with a raw serving of a different weight can otherwise answer the wrong question. RAE makes different sources comparable while keeping their identities intact.
Preparation matters
The carrot changes before you eat it.
A human carrot study distinguished precursor absorption from conversion into retinol. [4] Explore the food experiment in Carrot.
These are two separate steps: getting a precursor into the body, then changing it into another molecule. A comparison can improve the first without improving the second by the same proportion. That distinction is why a simplified arrow should not be mistaken for a fixed conversion guarantee.
The food and skin connection
Shared biology, different routes.
Cultured keratinocytes metabolized retinol into other forms. [5] Retinol explores this cellular evidence.
Food reaches the body through digestion and absorption; a topical retinoid is delivered to the skin in a formulation. The useful connection is the biology of vitamin A. Dietary intake and topical treatment remain different questions, with different evidence. Explore the specific skincare form in Retinol.
A brief note about concentrated supplements
Excess vitamin A can accumulate and cause harm, including birth defects. Pregnancy-related supplement decisions need clinician guidance. [2]
Cooking discovery
Bring the idea back to a meal.
The cookbook manuscript's Carrot + Ginger Salad and Fried Egg over Sweet Potato Hash offer two starting points. Read their food names with this family map in mind: a plant precursor in one dish, plant and animal ingredients together in the other. Recipe links are not yet published here.
